Brass Lion Distillery, a home-grown maker of gin, has made my fantasy come true. It provides The Gin Tree Expertise ($68) at its tasting room from Thursdays to Saturdays, 4 to 6pm, and it’s excellent for cocktail hour.
The set, good for 2, comes with two cocktails and 4 forms of small bites – served on metallic stands made for the model by metalsmiths Naked Metallic Co utilizing upcycled supplies.
Brass Lion plans to supply this by way of the 12 months and can change the cocktails and bites periodically.
On the night I’m there, the cocktail is Santa Clausmopolitan, made with its Singapore Dry Gin, cranberry and lemon juices and soda and is scented with rosemary. It’s not too fiercely alcoholic and a cool option to wind down on the unseasonably sizzling days in the mean time.
Among the many bites, Gin Cured Tuna Cone is the one I like finest. The fish is combined with the model’s Singapore Dry Gin French dressing and recent aromatics – orange supremes, fennel and radish.
Its Pahit Gin goes into Foie Gras Lollipop. The candy chocolate coating makes this a salty candy snack and the popping sweet is a beautiful shock on the tongue.
I want the model would bottle the Brass Lion Scorching Sauce that comes with Kueh Pie Tee, full of rooster, braised kale and turnip. It’s a zingy sauce, so compelling even for a chilli coward like me.
The Pahit Tiramisu would profit from extra gin. Way more. Go huge or go house, I say.
